7 Bones Roasted Leg of Lamb

Ingredients
- Leg of Lamb 1
- Red onion 1 sliced into rings
- Shallots 2 whole peeled
- Garlic cloves 3 rough cut
- Cherry tomatoes 10 whole
- Crushed tomatoes 1 20 oz can
- Beef stock 3 cups
- Carrots 10 whole peeled
- Fresh rosemary 3 sprigs
- Fresh sage 10 leaves whole
- 7Bones Beef Rub 3tbsp
- Kosher Salt 1tbsp
- Black pepper 1tsp
- Olive oil 4tbsp
Preparation
- Trim any heavy fat from the lamb roast. Coat with olive oil and then dust with BBQ Bob’s 7Bones Beef rub on all sides. Place two tabelspoons of olive oil in a large skillet and heat on high.
- Sear lamb roast on all sides browning the meat then place into a large roasting pan or full size disposable steam pan. Pour beef stock, crushed tomato, salt and pepper into the pan and stir around.
- Place all other ingredients into the pan and shake another tbsp.. of 7Bones rub onto the lamb and veggies.
- Place a lid on the pan and roast at 375°F for approx. 5 hours total or until lamb is fork tender. NOTE: After 3 hours, remove lid and continue to cook basting the lamb in the juices every 20 minutes.
- When the lamb is finished, pull the meat from the bone and serve with the veggies and the liquid it was cooked in.
