BBQ Bob’s Fire Roasted Salsa

Ingredients
- 8 medium tomatoes (whole)
- 2 red bell peppers (whole)
- 2 yellow bell peppers (whole)
- 2 Spanish onions (peeled and halved)
- 3 large jalapeno (whole)
- 1 bulb of garlic (whole)
- 2 whole shallots peeled
- 2 lemons (halved)
- 2 limes (halved)
- 2 shots of Tito’s vodka
- 1 tbsp. kosher salt
- Spray olive oil
Preparation
- Lightly coat all veggies, limes and lemons with olive oil
- Salt lightly then roast directly over charcoal until each item chars and starts to soften
- Remove from the grill and place into a large bowl
- Remove any skins from onions, shallots and garlic
- Place veggies in the food processor and add 2 shots of Tito's vodka
- Pulse food processor until you get the consistency you want
- Squeeze in limes and lemons
- Add the rest of the kosher salt to taste
- Let sit in fridge for 1 hour or longer before serving
