Ribs with Rustic Garlic Mashed Potatoes & Root Vegetables

Ingredients

  • 5 racks of Hatfield St Louis Style Ribs (Find Hatfield products near you)

Holiday Seasoning

  • 1 cup kosher salt
  • ¼ cup black pepper
  • ¼ cup granulated garlic
  • 3 tablespoons granulated onion
  • 2 tablespoons sweet paprika
  • 2 tablespoons ground sage
  • 2 tablespoons ground thyme
  • 2 tablespoons dried rosemary sprigs
  • 1 tablespoon ground marjoram

Rustic Mashed Potatoes

  • 5 pounds Russet Gold potatoes
  • 1 block of Kerrygold Irish butter
  • 2 teaspoons Kosher salt
  • 2 teaspoons black pepper
  • 5 cloves roasted garlic (smashed)
  • 1½ cup sour cream
  • 1-2 cups whole milk

Roasted Root Vegetables

  • Parsnips
  • Carrots
  • Acorn Squash
  • Garlic (whole)

Preparation

  1. Set the temperature of your oven to 275°F -285°F.
  2. Remove the membrane from the ribs and trim any heavy fat.
  3. Lightly coat both sides of the ribs with olive oil.
  4. Season both sides of the ribs with holiday seasoning.
  5. Place the ribs in your Rib Rings™. Make sure the uncut side is facing up.
  6. If you are using baby back ribs, cook for 3 ½ -4 hours. If you are using spare ribs, cook for 4 ½ -5 hours or until the internal temperature of the ribs reach 200°F.
  7. Set the temperature of your oven to 400°F.
  8. Cut the vegetables into uniform stick pieces.
  9. Coat the vegetables with olive oil, salt, and pepper.
  10. Place the vegetables on a sheet pan and roast for approximately 30-40 minutes or until they are tender.
  11. Wash the potatoes and then place into a large pot. Add cold water to the pot until the potatoes are covered by at least an inch.
  12. Bring the water to a boil over medium-high heat and cool until the potatoes are tender, about 20 minutes.
  13. Drain the potatoes and place into a large bowl.
  14. Mash the potatoes until smooth.
  15. Add softened butter, salt, pepper, garlic, sour cream, and milk into the bowl.
  16. Use a hand mixer on medium-high for 1 minute, adding a little extra milk until you get the consistency you desire.
