What is the difference between Dome vs. Grate temperatures?
In any ceramic grill or bullet style vertical smoker you will find a dial thermometer in the “dome” or upper portion of the grill. This location is often a good distance from the cooking grate. When monitoring and controlling the cooking temperature, keep in mind the temperature in the dome can be very different than the grate, where the food is.
We personally like to control the temperature at the grate. We feel this is the most accurate way to cook your food. Air currents and indirect cooking set ups can cause dramatic temperature differences and if you clip your pit probe to the grate, don’t be surprised by a difference of up to 50° on the dome thermometer.
