Firey Hot Island Rub
We haven't liked any of the dry jerk seasonings we've tried, so we decided to develop this rub.....which a fan so aptly named “Jamaican Firewalk”. I definitely wanted a rub that had the unique flavor of Jamaican allspice berries and ginger, but these flavors can quickly overwhelm a recipe. So I worked hard to balance these unique and potent flavors against a backdrop of citrus, scallions, chives and plenty of heat. I hope you will find “Jamaican Firewalk” a pleasantly spicy one. Chicken seems like the best candidate for this rub. Though shrimp, pork, fish, or even veggies probably also benefit.
