Ingredients
- 6 Italian sweet peppers
- 6 chicken tenderloins
- 1 16 ounce bag of shredded cheese blend
- Alpha BBQ rub
- 1 lb. thin cut bacon
- 5 Fresno peppers (for eyes)
Preparation
- Set grill for 300°F direct
- Remove tops from peppers and set aside
- Remove seeds
- Season chicken tenderloins with Alpha Rub and trim to fit into each pepper (leaving room for shredded cheese)
- Stuff each pepper with chicken and shredded cheese
- Tooth pick each pepper top back on pepper
- Wrap each pepper in 1 or two pieces of bacon to cover whole pepper
- Grill direct at 300°F rotating peppers with tongs to get bacon crispy on all sides
- Grill for approx. 40-50 minutes until chicken reaches 160° F and bacon is crispy
- Serve with BBQ sauce
