BBQ Bob’s All Beef Grilled Meatballs with Shredded Smoked Gouda

Ingredients
- 2 lbs 80/20 ground sirloin
- 2 tbsp BBQ Bob’s 7 Bones Beef rub
- 1 egg
- 1 1/2 cup Panko breadcrumbs
- 1 bottle of BBQ Bob’s Beef and Big Game BBQ Sauce
- 1 cup cool water
- 1 5 oz wheel of smoked Gouda cheese - shredded
Preparation
- Set grill to 300°F on one side direct heat and on the other side indirect heat
- Mix all of the ingredients together in a large bowl to make meatballs (only use 1/2 cup of the BBQ sauce)
- Form the meatballs into a golf ball size and lay them on a sheet pan
- Place the sheet pan on the direct side of the grill turning the meatballs every 30 seconds to get a nice color
- Once they have a nice color, place the meatballs on the indirect side of the grill
- Continue cooking the meatballs until they reach 145°F internal temperature
- Pour the rest of the BBQ Bob's Beef and Big Game BBQ Sauce into a disposable half pan along with the cooked meatballs and make sure to coat them well
- Put the whole pan on the grill and allow them to caramelize for 3-4 minutes
- Shred the smoked Gouda cheese over the meatballs and serve with toothpicks
