Ingredients
- 10 medium jalapeños
- 2 blocks Philadelphia cream cheese softened
- 5 oz. Mad Maddie’s Buttery Garlic seasoning
- 20 chicken skins from chicken thighs (save the thighs and grill them later)
- 7 oz. Mighty Mitch’s Wing sauce
Preparation
- Set grill or smoker to 275°F indirect and use a couple of pieces of your favorite smoke wood for smoke flavor
- Slice the jalapeños in half longways and remove seeds
- Mix softened cream cheese with 3 oz Mad Maddie’s seasoning and 4 oz of Mighty Mitch’s sauce. Let mixture sit out for 15 minutes at room temperature
- Remove the skins from the chicken thighs, remove any heavy fat
- Fill each jalapeño half with cream cheese mixture, then wrap each half in chicken skin, placing a toothpick or two into the pepper to hold the skins on
- Season the skins with Mad Maddie’s and place them in the smoker or grill indirect at 275°F for 1 hour to 1 hour and 15 minutes until skins render
- Finish them on a hot direct grill to crisp the kind and serve with warm Mighty Mitch’s wing sauce for dipping
