Guacamole Deviled Eggs w/ Crispy Bacon

Ingredients

  • 4 - Soft to the touch avoccados
  • 1 - Jalapeno - seeded/chopped fine
  • 3 Cups- Smoked Bacon
  • 2oz- Small yellow onion diced
  • 1- Garlic clove minced
  • 1- Lemon
  • 1/4 Cup cilantro
  • 1/4 Tsp BBQ Bobs Alpha Rub
  • Pinch of Kosher salt
  • Dozen eggs
  • Bacon

Preparation

  1. Slice avocados, remove the pit, and remove them from the skin. Smash them with a fork until smooth then add the juice from 1 lemon right away and mix in (keeps avocado from browning)
  2. Add all of the other ingredients and mix in with a fork
  3. Cover and refrigerate or use right away
  4. Place eggs in a single layer in a saucepan; add water to depth of 3 inches. Bring to a boil; cover, remove from heat and let stand 15 minutes
  5. Fry bacon on the stovetop
  6. Tap each egg firmly on the counter until cracks form all over the shell
  7. Peel under cold running water
  8. Slice eggs in half lengthwise, and carefully remove yolk and scoop in the Guacamole
  9. Top with cut up bacon slices
