BBQ Bob’s Jalapeño Cheddar BBQ Meatballs

Ingredients
- 1 lbs. meatloaf mix (mixture of beef, pork and veal)
- 2 tsp. BBQ Bob’s Alpha BBQ Rub (+ some for dipping meatballs)
- 2 fresh jalapenos chopped
- 2 cups of shredded cheddar cheese
- 1 cup of BBQ Bob’s Hav'N a BBQ Sauce (+ some for basting)
- ½ tsp. salt
- ¼ tsp. black pepper
- 1 cup of non-flavored bread crumbs
- 1 egg
- ¼ cup of cold water
Preparation
- Mix all ingredients well in a bowl then form meatballs slightly smaller than a golf ball.
- Coat the meatballs in BBQ Bob’s Alpha BBQ Rub and place on the grate, cooking direct at 275° F
- Turn the meatballs as they brown then place them in a half pan to finish cooking.
- Once the meatballs have reached an internal temperature of 160° F, they are finished.
- Heat some extra BBQ Bob’s Hav'N a BBQ Sauce in a bowl and use for dipping.
