Pulled Beef Chuck Roast Sandwich

Ingredients
- 4 lbs chuck roasts
- 1 - 2 bottles of BBQ Bob’s Beef and Big Game Sauce
- 2 oz. BBQ Bob’s Mad Maddie’s Buttery Garlic Seasoning
- 3 oz. BBQ Bob’s 7 Bones Beef Rub
- 1 small Spanish onion diced
- 1 red onion sliced into rings
- 3 Anaheim peppers chopped
- 2 shallots chopped
- 4 cloves of garlic finely chopped
- 32 oz beef stock
- Dill pickle slices
- Spray oil
- Fresh rolls
Preparation
- Get your grill up to 400°F direct set up
- Trim any heavy fat from the chuck roasts
- Spray both sides of chuck roasts with oil
- Season the chuck roasts with a base coat of Mad Maddie’s Buttery Garlic Seasoning and a topcoat of 7 Bones Beef Rub
- Allow seasoned chuck roasts to sit for 30 minutes
- Sear the chuck roasts direct on the grill to give them color and bark and then remove
- Bring grill temperature down to 300°F
- Add the peppers, Spanish onion, shallots, garlic, 14 oz of bbq sauce and beef stock to a cast iron Dutch oven or grill safe pot
- Place your seared chuck roasts into the pot and put the lid on
- Allow it to cook for approximately 3 hours or until the chuck roasts are pull apart tender
- While the chuck roasts cook, grill the red onion rings and set aside
- After 3 hours, shred the beef and allow it to cook for another 10 minutes in the pot.
- Assemble the sandwich with pulled beef, grilled red onion, pickle slices, and top with BBQ Bob’s Big Game Sauce
