Pulled Beef Chuck Roast Sandwich

Description: We're positive you haven't tried a sandwich this GOOD. It's packed with bold flavored beef and topped with sweet pickles and grilled onions. Don't walk, RUN to the grill to cook this recipe.

INGREDIENTS

DIRECTIONS

  1. Get your grill up to 400°F direct set up
  2. Trim any heavy fat from the chuck roasts
  3. Spray both sides of chuck roasts with oil
  4. Season the chuck roasts with a base coat of Mad Maddie’s Buttery Garlic Seasoning and a topcoat of 7 Bones Beef Rub
  5. Allow seasoned chuck roasts to sit for 30 minutes
  6. Sear the chuck roasts direct on the grill to give them color and bark and then remove
  7. Bring grill temperature down to 300°F
  8. Add the peppers, Spanish onion, shallots, garlic, 14 oz of bbq sauce and beef stock to a cast iron Dutch oven or grill safe pot
  9. Place your seared chuck roasts into the pot and put the lid on
  10. Allow it to cook for approximately 3 hours or until the chuck roasts are pull apart tender
  11. While the chuck roasts cook, grill the red onion rings and set aside
  12. After 3 hours, shred the beef and allow it to cook for another 10 minutes in the pot. 
  13. Assemble the sandwich with pulled beef, grilled red onion, pickle slices, and top with BBQ Bob’s Big Game Sauce
