Turkey Brine 2.0

Description: BBQ Bob is back with a new brine recipe! Change up your Thanksgiving turkey this year and try a spatchcocked turkey!

INGREDIENTS

  • 3 cups of water (for boiling)
  • 1 cup kosher salt
  • 1 cup light brown sugar
  • 5 bay leaves
  • Fresh rosemary
  • Fresh thyme
  • Fresh oregano
  • Fresh sage
  • 4 tbsp tri-colored peppercorns
  • 2 lemons halved
  • 5 cloves of garlic cut in half
  • 12-20 quarts of cold water (for brine water)

DIRECTIONS

  1. Add 3 cups of water, salt, light brown sugar, bay leaves, rosemary, thyme, oregano, sage, peppercorns, lemons, and garlic to a sauce pot and bring to a simmer then remove from heat
  2. Add 12 quarts of cold water to a large food-grade bucket with a lid
  3. Once simmering ingredients cool, add them to the bucket and stir well
  4. Submerge turkey into the brine and add water to completely submerge turkey if needed
  5. Allow turkey to brine in a refrigerator for 8-10 hours in the brine. If you do not have room in the fridge. Pack ice around the bucket and secure the lid. Keep the turkey and brine at a temperature of 35-38 degrees during the brining process.
  6. Rinse and dry turkey before seasoning
