Chickie Poppers

INGREDIENTS

DIRECTIONS

  1. Set grill or smoker to 275°F indirect and use a couple of pieces of your favorite smoke wood for smoke flavor
  2. Slice the jalapeños in half longways and remove seeds
  3. Mix softened cream cheese with 3 oz Mad Maddie’s seasoning and 4 oz of Mighty Mitch’s sauce. Let mixture sit out for 15 minutes at room temperature
  4. Remove the skins from the chicken thighs, remove any heavy fat
  5. Fill each jalapeño half with cream cheese mixture, then wrap each half in chicken skin, placing a toothpick or two into the pepper to hold the skins on
  6. Season the skins with Mad Maddie’s and place them in the smoker or grill indirect at 275°F for 1 hour to 1 hour and 15 minutes until skins render
  7. Finish them on a hot direct grill to crisp the kind and serve with warm Mighty Mitch’s wing sauce for dipping
