Grilled Shrimp Scampi Over Linguini

Description: Grab your wooden skewers and put your taste buds on high alert. There’s nothing better than shrimp grilled to perfection served over a bed of buttered linguini noodles. Make with fresh ground pepper, parsley, lemon and of course, lots of garlic!

INGREDIENTS

  • 1 tsp kosher salt 1 pound linguine noodles
  • 2 tablespoons butter
  • 3 tablespoons good olive oil
  • 1 1/2 tablespoons minced garlic (4 cloves)
  • 1 pound large shrimp in the shell
  • 1/4 teaspoon freshly ground black pepper
  • 1/4 cup chopped fresh parsley leaves
  • Zest of one lemon
  • 1/4 cup freshly squeezed lemon juice (2 lemons)
  • 1/4 lemon, thinly sliced in half-rounds
  • 1 tsp BBQ Bob’s Alpha BBQ Rub

DIRECTIONS

  1. Cook linguini for 7 to 10 minutes, or according to the directions on the package.
  2. Set grill to 300 F with a direct fire. 
  3. Peel shrimp and remove vein.
  4. Skewer the shrimp on to soaked wooden skewers.
  5. Brush with olive oil and dust with BBQ Bob’s Alpha BBQ Rub
  6. Grill the shrimp over the fire until they turn pink then pull them from the heat.
  7. In a pan on the grill or on the stove, melt the butter and olive oil over medium-low heat. Add the garlic. Saute for 1 minute. Remove the shrimp from the skewers and add them to the pan along with 1 teaspoons of salt and 1/4 tsp. black pepper. Stir the shrimp in the pan for about 2 minutes then remove from the heat and add the parsley, lemon juice and lemon zest. 
  8. When the pasta is done, drain the cooked linguine and then put it back in the pot. Immediately add the shrimp and sauce, toss well, and serve.
