BBQ Bob’s Jalapeno Cheddar BBQ Meatballs

Description: Tired of serving the same old meatballs? How about adding some zest with hot n’ spicy Jalapeno peppers and creamy Cheddar cheese? This easy-to-follow recipe is great for a quick meal, appetizer or late-night snack attack. So versatile, you’ll want to make extras to freeze.

INGREDIENTS

  • 1 lbs. meatloaf mix (mixture of beef, pork and veal)
  • 2 tsp.  BBQ Bob’s Alpha BBQ Rub (+ some for dipping meatballs)
  • 2 fresh jalapenos chopped
  • 2 cups of shredded cheddar cheese
  • 1 cup of BBQ Bob’s Hav'N a BBQ Sauce (+ some for basting)
  • ½ tsp. salt
  • ¼ tsp. black pepper
  • 1 cup of non-flavored bread crumbs
  • 1 egg
  • ¼ cup of cold water

DIRECTIONS

  1. Mix all ingredients well in a bowl then form meatballs slightly smaller than a golf ball.
  2. Coat the meatballs in BBQ Bob’s Alpha BBQ Rub and place on the grate, cooking direct at 275° F
  3. Turn the meatballs as they brown then place them in a half pan to finish cooking.
  4. Once the meatballs have reached an internal temperature of 160° F, they are finished.
  5. Heat some extra BBQ Bob’s Hav'N a BBQ Sauce  in a bowl and use for dipping.
