Sausage and scallop skewers with a honey pomegranate glaze

INGREDIENTS

Grilled Sausage and Scallop Skewers:

  • 5 mild Italian sausage links
  • 1 lb. sea scallops
  • Heirloom tomatoes
  • 3 jalapeño peppers
  • 5-6 wooden skewers
  • Kosher salt
  • Black pepper
  • Light olive oil

Pomegrante Glaze:

  • 1 small shallot chopped fine
  • 1 small chili pepper chopped fine
  • 1 clove fresh garlic chopped fine
  • 1/4 tsp black pepper
  • 1/4tsp. Kosher salt
  • 1 tsp. Crushed ginger
  • 3 tbsp. Honey
  • 1/2 cup pomegranate juice

DIRECTIONS

Grilled Sausage and Scallop Skewers:

  1. Light your grill and set the temperature to 400 degrees F Grill the sausage links until they reach 170 degrees F internally.
  2. Brush some light olive oil on the scallops and dust them with a touch of kosher salt and black pepper.
  3. Skewer the scallops, heirloom tomatoes and jalapeños.
  4. Grill the scallops until golden brown on both sides (approx. 2 minutes per side). When the scallops are ready the vegetables will be as well.
  5. Cut the tips off of each sausage link at a 45 degree angle and place two together to form hearts.
  6. Skewer the sausage hearts together.
  7. Once all of your skewers are ready, brush them with the pomegranate glaze and serve with fresh baguette and your favorite beverage.

Pomegranate Glaze:
Combine all ingredients into a sauce pan. Simmer and then reduce the head to thicken. Add 1 tsp of Salted butter before serving with Scallops
