Thanksgiving Turkey

Description: Surprise your guests this Thanksgiving with this savory, mouth-watering, smokey Turkey recipe, featuring delicious umami seasoning, a sweet olive oil glaze, and a brine that is sure to turn some heads!

INGREDIENTS

Brine (optional but recommended):

  • One 5 gallon bucket (new and clean)
  • Cold water and a small bag of ice
  • 1 cup of kosher salt
  • 4 garlic cloves whole
  • 3 bay leaves
  • 2 lemons halved
  • 1.5 cups of brown sugar
  • 3 tbs. of turkey seasoning (make an extra batch of seasoning for cooking the turkey)

Turkey Seasoning (double or triple recipe if necessary):

  • 1 tbsp. sage
  • 1 tbsp. chopped roesmary
  • 1 tbsp. thyme
  • 2 tbsp. kosher salt
  • 1 tsp. black pepper
  • 1 tbsp. garlic powder

DIRECTIONS

Brine Instructions:

  1. Heat salt, sugar, and seasoning in 2 cups of water to dissolve
  2. Let it cook and add the brine in the bucket
  3. Place turkey into bucket and pour ice-cold water over the turkey so that it is totally submerged
  4. Place the bag of ice on top and store in a cold area that is 38°F or less
  5. Brine for 8-10 hours then rise and dry

Turkey Instructions:

  1. Defrost turkey days ahead of time to make sure inner cavity has defrosted thoroughly
  2. Preheat smoker to 325°F
  3. Remove turkey from package and remove all inner packages from cavity
  4. Cut off any excess fat or hanging skin
  5. Take a stick of butter and slice into four sections (cut in half and then in half long ways)
  6. Season butter pads with turkey seasoning and place them up under the skin on the breast side
  7. Coat entire turkey with olive oil and then dust with seasoning
  8. Allow about 15 min per lb.
  9. Cook to an internal temp of 160F in the breast and 180-190° in the thigh/ leg area
  10. If your turkey is finished prior to serving, let it rest in a dry cooler or in the oven (while the oven is off)
