Ribs with Rustic Garlic Mashed Potatoes & Root Vegetables

Ingredients
- 5 racks of Hatfield St Louis Style Ribs (Find Hatfield products near you)
Holiday Seasoning
- 1 cup kosher salt
- ¼ cup black pepper
- ¼ cup granulated garlic
- 3 tablespoons granulated onion
- 2 tablespoons sweet paprika
- 2 tablespoons ground sage
- 2 tablespoons ground thyme
- 2 tablespoons dried rosemary sprigs
- 1 tablespoon ground marjoram
Rustic Mashed Potatoes
- 5 pounds Russet Gold potatoes
- 1 block of Kerrygold Irish butter
- 2 teaspoons Kosher salt
- 2 teaspoons black pepper
- 5 cloves roasted garlic (smashed)
- 1½ cup sour cream
- 1-2 cups whole milk
Roasted Root Vegetables
- Parsnips
- Carrots
- Acorn Squash
- Garlic (whole)
Preparation
- Set the temperature of your oven to 275°F -285°F.
- Remove the membrane from the ribs and trim any heavy fat.
- Lightly coat both sides of the ribs with olive oil.
- Season both sides of the ribs with holiday seasoning.
- Place the ribs in your Rib Rings™. Make sure the uncut side is facing up.
- If you are using baby back ribs, cook for 3 ½ -4 hours. If you are using spare ribs, cook for 4 ½ -5 hours or until the internal temperature of the ribs reach 200°F.
- Set the temperature of your oven to 400°F.
- Cut the vegetables into uniform stick pieces.
- Coat the vegetables with olive oil, salt, and pepper.
- Place the vegetables on a sheet pan and roast for approximately 30-40 minutes or until they are tender.
- Wash the potatoes and then place into a large pot. Add cold water to the pot until the potatoes are covered by at least an inch.
- Bring the water to a boil over medium-high heat and cool until the potatoes are tender, about 20 minutes.
- Drain the potatoes and place into a large bowl.
- Mash the potatoes until smooth.
- Add softened butter, salt, pepper, garlic, sour cream, and milk into the bowl.
- Use a hand mixer on medium-high for 1 minute, adding a little extra milk until you get the consistency you desire.
